Easy Flavorful Strawberry Vinaigrette Recipes

Do you enjoy lighter meals during the hot summer months like I do?  Easy, delicious meals or snacks are high on the list for summer cooking.  Nothing like a fresh salad with all the ingredients from your own garden or the local Farmers Market.

Here are a couple of delicious strawberry vinaigrette recipes for you to try:

Classic Strawberry Vinaigrette

Ingredients:

– 1 cup fresh strawberries, hulled and sliced
– 2 Tbs honey
– 2 Tbs apple cider vinegar
– 2 Tbs  extra virgin olive oil
– Salt to taste
– Pepper to taste

Instructions:

1. Blend the Strawberries: Place the strawberries in a blender or food processor and blend until smooth.
2. Add all Ingredients and blend
3. Blend Until Smooth
4. Taste and Adjust: Taste the vinaigrette and adjust the seasoning as needed.
5. Serve: Transfer the vinaigrette to a jar or bottle and store it in the refrigerator. Shake well before each use.

Creamy Strawberry Vinaigrette

Ingredients:

– 1 cup fresh strawberries, hulled and sliced
– 2 tablespoons Greek yogurt or sour cream
– 2 tablespoons honey or maple syrup
– 1/4 cup white wine vinegar
– 1/4 cup extra virgin olive oil
– 1 teaspoon poppy seeds (optional)
– Salt and pepper to taste

 Instructions:

1. Blend the Strawberries: Place the strawberries in a blender or food processor and blend until smooth.
2. Add Other Ingredients: Add the Greek yogurt, honey, white wine vinegar, olive oil, and poppy seeds (if using) to the blender.
3. Blend Until Smooth: Blend all the ingredients together until you get a smooth and creamy vinaigrette.
4. Taste and Adjust: Taste the vinaigrette and adjust the seasoning as needed. You can add more honey for sweetness or more vinegar for tanginess.
5. Serve: Transfer the vinaigrette to a jar or bottle and store it in the refrigerator. Shake well before each use.

Tips:

  • 2 1/2 Tbsp Honey
  • 2 Tbsp Olive Oil extra virgin
  • 2 Tbsp Apple Cider Vinegar
  • 1/4 tsp Salt
  • 1/4 tsp Ground Pepper
  • 1 tsp Water (optional)

Instructions
 

  • Using a blender, blend all ingredients until smooth
  • add a teaspoon of water if consistency is too thick
